ANOTHER DAY, ANOTHER DOLLAR - OR NOT

This is still the day the Lord has made and I will be glad and rejoice in this day (Psalm 118:)

I don't just quote that to be sayin' something. I say it because I believe it. I say it because I have seen many days of recession and depression (financially, emotionally, and spiritually) while raising my kids. Did I always rejoice in the day and all that came with it? NO. But now I can look back and see the wisdom of rejoicing, and pass it on to someone else who may be going through. Key word in any day is "THROUGH." If you don't give up you will come through.

Somebody, somewhere is always going through a RECESSION, DEPRESSION TIME. How have folks all over the world managed to keep going? DON'T QUIT!!

Look at this day and where you are in this day; positive and negative.
Who's around you? ...and don't even say nobody. Jesus said I will never leave you or forsake you.
Are you clothed?
Can you get something to eat today?
Can you work today?
Are you able to make value of the day or waste it? This is important. We have a choice of action or inaction.
Can you sing a song today, and what kind of song will it be?

Q: What does all the above have to do with the recession?
A: Getting over

Our state of mind and how we approach our situations help us or hinder us in going through. If you have children and have lost your job, can't do all the activities you once did with and for them; the most loving thing you can do is be honest with them and yourself. Then, get a plan and a song for the day.

Are you a Blues song? "Everyday I have the Blues"
This song will bring you so far down, that you won't even want to be around yourself. And NEVER mix this song with alcohol or other chemicals. This is a NOBODY WINS combination.

Are you a Pity me? "Nobody wants me when I'm down and out"
This song will keep you down and out, on the road to not doing much for yourself or anyone else. Pity tries to justify a bad situation. It will always find something or someone to blame, and keeps you from realizing the power and love that is around you.

Are you an overcomer song? "Victory is Mine"
This song can encourage you to look at your resources, talents, gifts and see how you can use them in the moment.

Your song shows up in the way you live your life. I have lived all these songs at one time or another, and the quickest way for me was to sing a song of praise, even when I was in the dumps. Whatever you do in the hard times - DON'T QUIT!!

YOUR MAMA WAS RIGHT - EAT YOUR CHICKEN SOUP

A'righty Now!! All this talk about Swine Flu, chicken soup is still the best way to feed your body when you're feelin' low. Not any chicken soup, try making your own. IT'S NOT HARD! I promise, and I'm going to give you the recipe my mama gave me.

Wash your hands, cough or sneeze into your sleeve, and wash your hands, or use wipes, or that liquid stuff that cleans, and wash your hands. Trust the LORD and LIVE YOUR LIFE. It has been awhile since I've seen and heard so many panicky young folks. Fear of the unseen can really spoil some good things happening in people's lives. Learn to use common sense, so if you do get sick you'll take percautions, and like the lil' pink bunny - you keep on going, and going, and going. Now back to the chicken soup.

First, go to the grocery store
get one whole chicken (okay take the easy way, get it cut up). You really should get the dark and light meat for flavor and I think they add differently in nutrition, even tho' I no nothing of nutrition. I'm just a mom.

CLEAN/WASH THE CHICKEN. Folks I don't care what you see on the various cooking networks (LOVE EM'), wash/clean your meat, you don't know whose funky hands have been on that food before you take it out of the package. I know technology has come so far.

Cover the chicken with cold water. ADD: celery cut up 1-3 stalks. I like the leaves, and the amount is up to you. 2 carrots cut up in chunky pieces. One large onion chopped, and I like green pepers and sweet red ones chopped in medium pieces. Garlic, 2-3 cloves, smashed. I like rosemary too, salt and pepper. Taste your food - you know what you like. When it comes to a boil, simmer for about 1 1/2 hours, let the flavors take over.

Some of you may like noodles. I get the thick ones (love em'), lot's of them.
I like dumplin's. Now these aren't hard to make either. Trust me!!

1 1/2C flour
2 teaspoon baking powder
pinch of salt
3 teaspoon Crisco (hard, white)
couple of pinches of parsley
3/4 Cup of milk or buttermilk

mix baking powder, flour, salt and parsley, cut in Crisco, mix lightly milk. (don't handle it alot).

I take a tablespoon and break some off, add it to the boiling chicken stock, let it simmer for 8-10 minutes, and eat up.

Check on the internet about nutritional facts of chicken soup.
If you REAAALY can't cook, Progresso has a wonderful Chicken Noodle Soup, so does Campbell's. I hope you try to fix it, and let me know how it came out. ENJOY!!!
